Ingredients
- 8 sea bream fillets (100 g each)
- 2 tbsp lemon juice
- Salt
- freshly ground pepper
- 30 g crab butter
- 30 g flour
- 50 ml white wine
- 250 ml Water
- 50 ml heavy cream
- 100 g shrimp
- 1 Spring onion
- 2 Tomatoes

Blanch the tomatoes for a few seconds, shock in ice water, peel, quarter, seed and dice. Wash, trim and slice the spring onions into rings or small pieces.

Drizzle the sea bream fillets with lemon juice, season with salt and pepper, roll them up and place in a bowl. Knead the crab butter with flour and add it as coarse flakes. Add wine, water, cream, shrimp, spring onion and tomatoes and mix well. Cover and cook at 850 W for about 8 minutes.

Remove the fish fillets, whisk the sauce until smooth and season with salt and pepper. Pour the sauce over the fillets.
