Ingredients

  • 600 g sea bass (pre‑cooked)
  • 4 small green chili peppers
  • 2 dried red chilies (crushed)
  • 3 stalks of celery (including the greens)
  • Salt
  • Pepper (freshly ground)
  • 200 ml white wine
  • 200 ml fish stock

    Wash the fish, pat dry and make 2–3 diagonal slits on each side up to the bones. Season inside and out with salt and sprinkle crushed chili over it. Place the fish in a steamer basket. In a steaming pot bring together white wine, fish stock and celery greens to a quick boil, then add the steamer basket, top the fish with green chilies, cover and steam for about 8–10 minutes.

    Carefully lift the fish from the steamer basket, arrange on a plate and drizzle generously with the broth. Garnish with some celery greens if desired.
