Squid Tomato Stew

Ingredients

  • 500 g pre‑cooked squid (or octopus)
  • 2 tbsp olive oil
  • 1 onion
  • 700 g tomatoes
  • 2 tbsp Tomato paste
  • 1 tsp paprika powder
  • 1 pepperoni pepper
  • 1 tsp thyme
  • 250 ml fish stock

Instructions

    Wash and cut the squid or octopus into small pieces. Heat the oil in a large pot. Peel and thinly slice the onion, then sauté it; add the squid and simmer covered over medium heat for 20 minutes.

    Brew the tomatoes, peel them, remove seeds, and dice the flesh. Mix tomato paste and paprika with the squid. Wash the pepperoni pepper, halve it lengthwise, deseed, and finely chop. Stir in the tomatoes and season with thyme and salt. Add the fish stock, cover the pot, and simmer for 30 minutes. Adjust seasoning with salt and pepper.
