Ingredients
- 500 g peeled potatoes (stiff‑cooking, leftover)
- 1 onion
- 4 tomatoes
- 300 g cooked pork roast (e.g., leftovers from Sunday roast)
- 2 tbsp butter
- 100 g bacon cubes
- 2 tbsp freshly chopped parsley
- 10 eggs
- Salt
- ground pepper
Instructions

Preheat the oven to 180°C fan.

Peel and slice the potatoes. Peel and dice the onion. Wash and chop the tomatoes. Tear the pork roast into bite‑sized pieces.

Heat butter in an ovenproof skillet. Sauté potatoes, onions, pork, and bacon, turning occasionally until lightly browned. Add tomatoes and parsley.

Whisk the eggs, season with salt and pepper, then pour over the skillet contents. Transfer to the oven and bake for about 20 minutes, or until the eggs are set.
