Ingredients
- 300 g boiled potatoes (firm-cooking)
- 1 onion
- 1 Garlic clove
- 100 g Ham
- 2 Eggs
- 1 oil
- parsley
- Salt
- Pepper

Cut the potatoes into small cubes. Peel and finely dice the onion and garlic. Heat oil in a pan, sauté garlic and onions until translucent. Add the potatoes, season with salt and pepper, and stir-fry while turning.

Slice the ham and add it to the pan. Whisk the eggs, season with salt and pepper, pour evenly over the mixture, and let set. Sprinkle finely chopped parsley on top, fold together, and serve.
