Burger with Coleslaw

Ingredients

  • 200 g white cabbage
  • 1 Carrot
  • 0.5 onion
  • 40 g mayonnaise
  • 40 g sour cream
  • 0.5 tsp Dijon mustard
  • Salt
  • Pepper
  • 1 tsp whole-grain sugar
  • 1 tsp lemon juice
  • 400 g French fries
  • 600 g ground beef
  • 2 tbsp Rapeseed oil
  • 4 burger buns
  • 4 tsp green pesto
  • 20 g mixed salad greens

Instructions

    Remove outer leaves from the cabbage, cut out the core in a wedge shape and shred the cabbage on a kitchen grater (or slice into fine strips). Peel the carrot and grate it into thin strips. Mix both together well in a bowl so that the cell walls break apart.

    Peel half an onion and slice it into thin strips; add to the mixture. Stir in mayonnaise, sour cream, and mustard. Season with salt and pepper. Let rest for at least 30 minutes. Re-season with salt, pepper, sugar, and a few dashes of lemon juice before serving.

    Prepare the fries according to the package instructions in a preheated oven.

    Meanwhile season the ground beef with salt and pepper, form four patties, and cook them in a hot skillet with oil for about 4 minutes on each side. Toast the burger buns briefly, cut them in half, and spread pesto on the bottom halves. Wash and dry the salad greens, then layer them on the buns. Place one meat patty and some coleslaw on top. Cover with the bun tops and serve with fries.
