Ingredients

  • 2 red chili peppers
  • 2 Garlic cloves
  • 2 cm fresh ginger
  • 2 tbsp Coconut oil
  • 2 tbsp red curry paste
  • 200 ml vegetable broth
  • 400 ml coconut milk
  • 1 eggplant
  • 400 g chayote (fruit flesh)
  • 400 g tempeh
  • 400 g jackfruit (sliced)
  • 1 tbsp hoisin sauce
  • 1 tbsp lime juice

Instructions

    Wash and slit the chili peppers. Peel and finely chop the garlic and ginger. Sauté everything together in a hot wok with oil. Stir in the paste, cook briefly, then deglaze with broth and coconut milk. Simmer for about 10 minutes.

    Meanwhile, peel the eggplant and dice its flesh. Dice the chayote fruit flesh and tempeh. Peel the jackfruit and cut the fruit flesh along the segments into triangular pieces. Add everything to the curry and simmer gently for about 10 more minutes.

    Season with hoisin sauce and lime juice before serving.
