Ingredients

  • 1 kg Carrots
  • 1 tsp juniper berries
  • 0.5 tsp cumin seeds
  • 0.5 tsp Peppercorns
  • 2 tbsp Orange juice
  • 2 tbsp liquid honey
  • 2 tbsp olive oil
  • Salt

Instructions

    Preheat the oven to 200°C (400°F) with fan and top heat.

    Peel the carrots and cut into 5-6 cm long sticks. Crush the juniper berries and place in a bowl. Grind cumin seeds with peppercorns in a mortar, then mix with orange juice, honey and olive oil; add crushed juniper berries. Season with salt and toss with carrots. Spread on a baking sheet and bake for about 20 minutes until lightly golden brown.
