Ingredients

  • 2 packets saffron
  • 200 g fresh spinach
  • quail egg (any number)
  • 500 ml beetroot juice

Instructions

    Stir the saffron into about 100 ml lukewarm water. Wash, trim and simmer the spinach in about 300 ml water covered for about 15 minutes. Then puree with an immersion blender and keep warm.

    Cook the quail eggs hard for about 6 minutes. Bring the beetroot juice to a boil. Add about 400 ml to the saffron water and bring to a boil once more.

    Drain the eggs and shock them in cold water. While still hot, peel them (best with rubber gloves). Divide into the natural colors and let them soak for about 30 minutes. For stronger coloring leave the eggs in the dye longer.

    The finished quail eggs look very nice, e.g., on an Easter salad.
