Ingredients
- 2 handfuls mixed herb lettuce (e.g., red and green Swiss chard, arugula)
- 1 chicory head
- 1 romaine lettuce heart
- 2 oranges
- 1 Garlic clove
- 1 piece ginger (2 cm)
- 4 tbsp olive oil
- 1 tsp Dijon mustard
- 2 tsp sugar
- 4 tbsp sherry vinegar
- 2 tbsp sunflower seeds
- Salt
- freshly ground pepper

Clean, wash and dry the herb lettuce, chicory, and romaine. Tear larger leaves into small pieces. Peel the oranges thoroughly and remove all white pith. Cut orange segments between the fine membranes over a bowl. Arrange the mixed salad leaves with the orange segments on plates.

For the dressing, peel the garlic clove and ginger. Finely chop both and mix with olive oil and mustard. Stir in sugar and the collected orange juice. Add sherry vinegar and sunflower seeds. Season the dressing with salt and pepper, then drizzle over the salad before serving.
