Ingredients

  • 100 ml Orange Juice
  • 150 g dried plums
  • 50 g candied plums
  • 50 g walnut kernels
  • 250 g softened butter
  • 100 g coconut blossom sugar
  • 50 g honey
  • 5 eggs
  • 400 g spelt flour type 1050
  • 50 g starch
  • 1 packet baking powder
  • 1 tsp ground cardamom
  • 100 ml milk (3.5 % fat)

Instructions

    Heat orange juice in a pot and soak the dried plums for about an hour.

    Meanwhile, roughly chop the candied plums and walnuts. Line a loaf pan with parchment paper.

    Cream the softened butter with coconut blossom sugar. Add honey and eggs one at a time, beating until frothy. Mix spelt flour with starch, baking powder, and cardamom, then alternately fold in milk. Drain the dried fruit, chop it finely, and fold into the batter along with the walnuts.

    Pour the batter into the prepared pan and bake in a preheated oven at 180 °C (Gas: Level 2–3) for about an hour. Check doneness with a skewer.

    Let the cake cool in the pan for 5 minutes, then remove it and set on a cooling rack to finish cooling.
