Plum Crumb Cake

Ingredients
- 100 g spelt flour (Type 630)
- 220 g whole spelt flour
- 150 g coconut blossom sugar
- 260 g butter
- 1 egg
- 30 g whole-grain breadcrumbs (3 tbsp)
- 800 g blue plums
- 80 g ground almonds

Gather the spelt flours on a work surface and create a well in the center. Add 50 g coconut blossom sugar, the egg, and 140 g of butter cut into small pieces to the well; use a knife to mix thoroughly. Quickly knead the resulting crumbs together until a smooth dough forms. Wrap the dough in cling film and refrigerate for 30 minutes.

While the dough chills, clean, wash, halve, and pit the plums. Roll out the dough on a lightly floured surface slightly larger than the pan; line the pan with the dough and lift up a rim. Prick the base several times with a fork and sprinkle with breadcrumbs. Arrange the plum halves in a brick-like pattern from outside to inside over the base.

Mix the remaining butter with the leftover flour, almonds, and remaining coconut blossom sugar; rub into crumbs with your hands and spread over the plums. Bake the cake on a middle rack in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 25–30 minutes. Remove, let cool briefly, lift out of the pan, cut into pieces, and serve.
