- 2 Eggs
- 3 tbsp Flour
- 75 g breadcrumbs
- 600 g Emmental (or Gruyère)
- vegetable oil (for frying)
- Lemon zest (for garnish)
Instructions

Place beaten eggs, breadcrumbs and flour on separate shallow plates. Cut cheese into 8-12 even pieces; first coat in flour, then dip in egg, and finally roll in breadcrumbs. Fry portions in hot oil for 3-4 minutes until golden brown.

Drain on kitchen paper and serve garnished with lemon zest.
