Baked Camembert on Lingonberry Toast

Ingredients
- 4 Camembert
- 4 Tbsp breadcrumbs
- 1 egg (beaten)
- Lingonberry jam (to taste)
- 4 slices of toast bread
- oil (for frying)
- parsley (for garnish)

Coat the camemberts in beaten eggs and then dredge them in breadcrumbs, pressing the coating firmly onto each cheese. Repeat the process and fry both sides in plenty of not-too-hot oil until golden brown, spooning hot oil over the cheese repeatedly to keep it moist.

Toast the bread slices, cut out circles the size of the camemberts with a round cutter, and spread 1 tbsp lingonberry jam on each. Place one fried camembert on top of each toast circle, then pour hot oil over the cheese and scatter parsley leaves (be careful: the oil may foam!). After a few seconds, remove the cheese with a slotted spoon and drain on kitchen paper. Garnish the cheeses and serve, accompanied by lingonberries in a small bowl.
