Elderflower Syrup

Ingredients
- 12 elderflower heads
- 4 packets citric acid
- 2 lemons
- 1 l water
- 1 kg sugar

Do not wash the flower heads, shake them well and discard any debris. Pick the elderflowers off the stems and place them in a large glass bowl. Wash the lemons, slice them thinly and distribute the slices over the flowers with the citric acid. Pour cold water over them and cover (e.g., with a plate). Leave the elderflowers overnight at room temperature, at least 20 hours, preferably 24 hours! The next day pour the elderflowers through a sieve into a new glass bowl and stir the juice with the sugar. Cover again and let stand for another day at room temperature.

Fill well-rinsed bottles. In the refrigerator Elderflower Syrup is shelf‑stable for at least one year.
