Elderflower Buns

Ingredients

  • 12 elderflower buds
  • 2 Eggs
  • 200 ml dry white wine
  • 150 g flour
  • 1 tbsp sugar
  • 1 Tbsp vanilla sugar
  • 2 tbsp liquid butter
  • 1 pinch salt
  • plant oil (for frying)
  • powdered sugar (for dusting)

Instructions

    Do not wash the elderflower buds, just shake them and set aside.

    Separate the eggs. Whisk the yolks with wine, flour, sugar, and vanilla sugar into a smooth dough. Stir in the butter and let rest for about 20 minutes.

    Beat the egg whites with salt until stiff and fold into the dough. Gently press the elderflower buds through the dough, let them drip off briefly, then fry portions in hot oil for about 2 minutes each side until golden brown. Drain on paper towels and dust with powdered sugar; serve fresh.
