Nudelteig

Ingredients
- 300 g flour
- 3 eggs
- 1 tbsp oil
- 0.5 salt
- flour (for the work surface)

Add the flour to a bowl, create a well in the center and add the eggs, salt and oil. Stir the flour into the mixture with a fork slowly until a uniform dough forms; then knead the remaining flour from the edges using clean hands. Knead on a lightly floured surface until the dough is firm and smooth but not crumbly. If the dough feels too dry, fold in 1–2 tbsp of water. Wrap the dough in plastic wrap and let it rest for at least 60 minutes. Roll out the dough thinly on a lightly floured surface, dust with flour, fan-fold into strips or run through a pasta machine with a flat noodle attachment; lay the strands flat on a board or hang them over a rack to dry.

Cook the noodles in plenty of salted water for 2–4 minutes!
