Ingredients
- 500 g elderberries
- 200 g plums
- 400 ml mineral water
- 4 tsp honey
- 2 tbsp potato starch

Wash the elderberries and pluck the berries from the stems. Wash the plums, quarter them, pit them, and add them with the elderberries to a pot.

Pour in the mineral water and bring to a boil. Sweeten with honey. Whisk the potato starch into a half cup of cold water until smooth.

Add the whisked potato starch to the fruit and cook for 2 minutes while stirring constantly. Remove from heat, pour into compote bowls, and let cool.
