Elderberry Jam

Ingredients
- 800 g elderberries
- 300 ml apple juice
- 350 g gelatin sugar (2:1)
- 0.5 untreated lemon (juice)

Wash the elderberries and remove them from their clusters, bring to a boil with the apple juice, cover and simmer for 10 minutes, then let cool slightly. Line a sieve with fresh muslin cloth and hang it over a bowl. Place the berries in the cloth and allow to drain overnight.

On the next day, squeeze out the cloth well. Add water to the elderberry juice to bring the total volume to 600 ml and return to a pot. Stir in the gelatin sugar and lemon juice. Bring to a rolling boil over high heat while stirring, then simmer for 4 minutes with bubbling.

Fill the jam into hot-washed jars and seal immediately. Place the lids on top and let cool for about 10 minutes, then flip the jars and allow to cool completely.
