Eggs with Guacamole and Red Pepper

Ingredients
- 8 eggs
- 1 lemon
- 200 g ripe avocado (1 ripe avocado)
- 2 tbsp cream cheese (0.2% fat)
- Salt
- Pepper
- 2 tbsp red peppercorns
- 2 Spring Onions
- 40 g arugula (0.5 bunch)
- 320 g smoked salmon (8 slices)

Peel the eggs and hard boil them in boiling water for 9–10 minutes. Shock and let cool completely.

Meanwhile, squeeze half a lemon. For the guacamole, peel, halve and pit the avocado. Mash the flesh with a fork and mix with cream cheese. Season with salt, pepper and lemon juice, then fill a piping bag with a star tip.

Peel the eggs and cut them in half lengthwise. Carefully remove the yolks from the whites and set aside. Pipe the guacamole into the egg halves and sprinkle with red peppercorns.

Wash, trim and slice the green part of the spring onions into long strips. Wash, rinse and dry the arugula. Halve the smoked salmon.

Arrange small bowls with arugula and salmon, place one filled egg half on each, and garnish with spring onion strips.
