Ingredients

  • 250 g sugar
  • 400 ml milk
  • 100 ml Orange Juice
  • 1 vanilla bean (the seed)
  • 2 tsp grated orange zest
  • 7 egg yolks (very fresh)
  • 250 ml white rum

Instructions

    Bring the milk with orange juice, orange zest, half of the sugar and the vanilla seed to a boil while stirring occasionally.

    Whisk the remaining sugar with the egg yolks in a hot water bath until frothy.

  3. 3.

    Pour the boiled milk over the froth, fold it in, then whisk in a wooden spoon while still in the water bath. Strain through a fine sieve and let cool slightly.

    Beat the mixture on high speed in a blender and slowly pour in the rum.

    Cool and store in bottles in a cool dark place.
