Eastern Yeast Loaf with Raisins

Ingredients
- 500 g flour
- 0.5 cube yeast (21 g)
- 200 ml lukewarm milk
- 80 g sugar
- 1 Tbsp vanilla sugar
- 100 g Ground Almonds
- 100 g raisins
- 80 g softened butter
- 60 g almond flakes
- 2 tbsp liquid butter (for brushing)

Pour the flour into a bowl and make a well in the center. Crumble the yeast into it, sprinkle the sugar on top, and stir with 1-2 tbsp lukewarm milk. Dust some flour over the mixture. Cover the bowl with a kitchen towel and let rest for 10 minutes in a warm place.

Add the remaining milk, sugar, vanilla sugar, almonds, raisins, and cut the butter into small pieces before adding them as well. Knead with dough hooks until a firm dough forms.

On a floured surface divide the dough into three equal parts and roll each into strands about 40 cm long. Braid the strands into a knot, shape into a ring, press the ends together firmly, and place on a baking tray lined with parchment paper. Cover again with a kitchen towel and let rise for 30 minutes.

Meanwhile preheat the oven to 180°C fan.

Remove the towel from the loaf and bake in the oven for about 20 minutes. Take it out briefly, brush with butter, and scatter almond flakes over the loaf. Bake another ~25 minutes until golden brown (test with a skewer).

Let the braid cool and decorate with ribbon if desired.
