Yeast Loaf
The basic yeast loaf recipe from Spoonsparrow is unbeatable: always fluffy and juicy!
Ingredients
- 500 g flour
- 42 g fresh yeast (1 cube)
- 100 g whole grain sugar
- 125 ml lukewarm milk
- 80 g soft butter
- 1 packet vanilla sugar
- 1 egg
- 1 egg yolk
- 1 tbsp condensed milk

Put the flour in a bowl and make a well in the center. Break in the yeast, stir in 1 tbsp whole grain sugar and half of the lukewarm milk. Cover the bowl with a kitchen towel and let the pre‑mix rise for 15 minutes in a warm place.

Add the remaining whole grain sugar, the rest of the milk, butter, vanilla sugar and egg to the mixture and knead into a smooth dough using the hand mixer’s dough hooks. Keep covered and let it rise in a warm spot for 35 minutes until visibly enlarged.

Briefly knead the dough on a floured surface. Divide it into three portions and shape each into a long roll. Braid the rolls into a loaf, press the ends together firmly. Place the braided loaf on a baking sheet lined with parchment paper and let rise again for 5 minutes.

Whisk the egg yolk with condensed milk and brush the dough with this mixture. Bake the loaf in a preheated oven at 180 °C (fan 160 °C, gas: level 2‑3) for 30–35 minutes.
