Duck with Strawberries

Ingredients
- 500 g strawberries
- 1 clove garlic
- 1 tsp Honey
- Lemon juice
- 1 Tbsp freshly chopped thyme
- Cayenne pepper
- 4 duck breast fillets (≈150 g each)
- Salt
- 2 tsp powdered sugar

Wash the strawberries, pat dry and roughly chop. Blend about half with peeled and coarsely chopped garlic, honey, and lemon juice. Stir in thyme and a pinch of cayenne pepper. Rinse the duck breasts, pat dry, and place them with the strawberry sauce in a freezer bag. Seal well and marinate in the refrigerator for about 5 hours.

Preheat the oven to 100 °C (top and bottom heat). Remove the duck breasts from the marinade and pat dry. Heat a non‑stick pan and lay the duck breasts skin side down. Sear for 3–4 minutes until golden brown, then flip briefly and transfer to a rack in the oven. Place a fat pan or baking sheet underneath and cook for about 30 minutes until pink through.

Wipe the pan with kitchen paper and sprinkle powdered sugar over it. Caramelize lightly, then pour in the pureed strawberry sauce and stir until boiling. Reduce slightly for a few minutes, then add the remaining strawberries. Season with salt and cayenne pepper.

Serve the duck breasts on potato mash as desired, drizzled with the strawberry sauce.
