Ingredients

  • 2 large duck breast fillets (about 300 g)
  • Salt
  • Pepper (freshly ground)
  • 2 oranges
  • 1 tsp Honey
  • 1 tbsp white balsamic vinegar
  • 4 tbsp rapeseed oil
  • 2 handfuls watercress

Instructions

    Preheat the oven to 120°C fan.

    Rinse the duck breasts, pat dry and score the skin in a diamond pattern. Season with salt and pepper, then sear the skin side in a hot pan for about 5 minutes until browned. Flip, sear briefly on the other side, and place on a parchment-lined baking tray. Roast in the preheated oven for 35-40 minutes to finish cooking.

    Wash the oranges hot, pat dry, grate one orange’s zest and peel both fruits thoroughly. Slice the fillets out of the fruit, collecting the juice. Squeeze the remaining pulp into the juice, then mix with the zest, honey, balsamic vinegar and oil. Season with salt and pepper.

    Rinse the watercress, clean and spin dry. Arrange the orange slices on plates, top with sliced duck breasts, drizzle with the dressing and serve.
