Duck in Plum Sauce

Ingredients

  • 4 small duck breast fillets
  • 150 ml poultry stock
  • 100 ml plum wine
  • 1 tbsp plum sauce (jar)
  • 2 tbsp dried plums
  • light soy sauce
  • 1 tsp ground ginger
  • Salt
  • ground pepper

Instructions

    Wash the duck breasts, pat dry and lightly score the skin in a diamond pattern. Season with salt and pepper, then brown slowly on the skin side in a not-too-hot pan for about 6-8 minutes until golden brown. Flip and remove from the pan. Drain excess fat and deglaze the pan with stock and plum wine. Let simmer slightly, then stir in plum sauce, dried plums, and ginger. Add a splash of soy sauce and return the duck breasts to the pan.

    Cook on low heat for about 10-15 minutes, turning the meat several times. Finish by seasoning with soy sauce and pepper. Remove the duck from the pan, let rest briefly, reduce the sauce if needed, then slice thinly and serve with plum sauce over warmed plates.
