Duck Breast Salad with Orange Dressing

- 350 g large duck breast fillet (1 large duck breast fillet)
- Salt
- Pepper
- 1 tbsp oil
- 2 oranges
- 0.333 small Lollo Rosso
- 3 leaves radicchio
- 1 handful lamb's lettuce
- 4 tbsp vinegar
- 2 tbsp oil

Preheat the oven to 80°C. Rinse the duck breast cold and score the skin in a diamond pattern, then rub with salt, pepper and oil. Place the duck breast skin-side down in a pan and sear for about 3 minutes on the skin side, flip and sear another 3 minutes. Flip the duck breast skin-side up into a baking dish and bake for about 40 minutes.

In the meantime wash, trim and dry the salads. Peel the oranges with a sharp knife, removing the white pith. Cut fruit segments from the separating membranes and catch the juice that drips out. Squeeze the remaining orange pulp for extra juice. Mix the juice with the remaining vinaigrette ingredients and season to taste. Arrange the salad on four plates decoratively. Remove the duck breast from the oven, slice it thinly and add it to the salad, drizzle with vinaigrette and serve.
