Ingredients

  • 1 cube fresh yeast
  • 50 g sugar
  • 200 g lukewarm milk
  • 500 g flour
  • 5 egg yolks
  • 60 g soft butter
  • 1 pinch salt
  • 1 tsp grated lemon zest
  • flour (for working)
  • fat (for frying)
  • jam (for filling, e.g. cherry jam or strawberry jam)
  • sugar (for dusting)

Instructions

    Dissolve the yeast with 1 tsp sugar in half of the milk. Put the flour into a bowl, make a well and pour in the yeasted milk. From the edge stir in a little flour and cover the pre‑mix for about 10 minutes to rise. Add the egg yolks, remaining sugar, soft butter, salt and lemon zest around the pre‑mix. Mix everything with the dough hook of a mixer adding the rest of the milk until a soft dough forms and kneads until it releases from the bowl edges. Cover and let rise in a warm place until doubled.

    Knead the dough on a floured surface, cut into about 12 portions, shape into balls and let rise another 20–30 minutes. Fry the dough balls portion by portion in hot fat (about 180 °C), turning once. Remove with a slotted spoon, drain on paper towels and let cool slightly. Use a piping bag with a long thin tip or cake pipe to inject jam from the side. Dust fresh doughnuts with sugar and serve immediately.
