Ingredients

  • 1 pinch salt
  • 150 g flour
  • 1 tbsp sugar
  • 1 tsp Baking powder
  • 4 eggs
  • frying oil (e.g., clarified butter)
  • powdered sugar (for dusting)

Instructions

    Bring 250 ml water with the butter and salt to a boil. Whisk in all of the flour at once into the boiling liquid. Stir until the dough forms a "white skin" on the bottom of the pot and is "burnt". Transfer the dough to a mixing bowl.

    Mix the sugar with the baking powder and fold it in (using a hand mixer with dough hooks). Gradually beat in the eggs, working everything into a smooth, glossy batter.

    Heat the frying fat in a wide pot. There should be enough fat so that the dough balls can float. Using a teaspoon, scoop small balls from the dough and fry them in the hot fat (about 170°C) in batches for 2‑3 minutes until golden‑brown. Turn occasionally to cook evenly. Drain the pastries on kitchen paper and dust with powdered sugar before serving.
