Ingredients
- 500 g cherries
- 1 stalk sage
- 2 Eggs
- 175 g flour
- 250 ml milk
- 1 tbsp melted butter
- 1 tsp lemon zest
- 1 tbsp sugar
- vegetable oil (for frying)
Instructions

Rinse the cherries and sage, then pat dry. Remove the sage leaves from the stems.

Separate the eggs. Whisk the flour with the milk until smooth. Add the yolks, butter, and lemon zest, mixing into a thick batter. Let rest for about 10 minutes.

Heat the oil in a pan, pot or fryer to about 170 °C.

Beat the egg whites until stiff, sprinkling sugar as you go. Fold the meringue into the batter.

Dip the cherries and sage leaves into the batter (best with tweezers) and fry in batches for about 1 minute each until golden brown.

Remove and drain on kitchen paper.

Dust with powdered sugar and serve with vanilla sauce if desired.
