Yeast Mice

Ingredients
- 1 cube yeast
- 500 g flour
- 0.25 l lukewarm milk
- 100 g sugar
- 100 g raisins
- 1 pinch cardamom powder
- 1 pinch Cinnamon powder
- 0.5 untreated lemon (zest of one)
- 64 peeled almond halves
- 1 egg
- 1 egg yolk
- 50 g butter
- 0.5 tsp cinnamon
- 4 tbsp sugar
- 1 l frying oil

Sift flour into a bowl, make a well in the center, crumble yeast into it and stir with some milk and 1 tsp sugar. Cover and let rise for 25 minutes. Wash raisins hot, drain and set aside 64 pieces for eyes. Mix remaining sugar, spices, egg, yolk and raisins with enough milk under the pre-dough until a kneadable dough forms. Let rise covered for 40 minutes. Divide dough into 32 equal balls and shape them into mouse-like ovals. Cover mice and let rest for 15 minutes.

Heat oil in a fryer to 175°C. Add five mice at a time to hot oil and fry each side for 3 minutes until golden yellow, remove and drain on kitchen paper. Mix cinnamon and sugar and coat the mice with it. Attach almond halves as ears to each mouse and press raisins for eyes. For tails you can shape marzipan dough or use wooden skewers.
