- 800 g deer fillet (trimmed)
- Salt
- black pepper (freshly ground)
- peanut oil
- 4 tbsp Maple syrup
- 4 pre-made tortilla sheets
- 1 tbsp chives

Season the whole deer fillet with salt and pepper, sear all sides in a little peanut oil in an oven‑proof pan, then bake for about 7 minutes at 180 °C. Wrap the cooked meat in foil and let rest.

Warm the tortilla sheets in the oven, then cut into strips.
