Ingredients
- Gerstenplätzchen
- 60 g barley groats
- 1 tbsp ground hazelnuts
- 1 chopped shallot
- 1 tbsp milk
- 2 tbsp grated Edam cheese
- 1 tsp plant oil
- Salt
- Pepper (freshly ground)
- 0.5 tsp paprika powder (sweet)
- 2 medium sweet potatoes
- 0.5 head of escarole
- 25 g diced bell pepper
- 2 tsp diced shallots
- 1 tbsp crumbed cream cheese
- 1 tbsp corn kernels (canned)
- Salt
- Pepper (freshly ground)
- 1 tsp Mustard
- 1 tsp chives
Instructions

Soak barley groats overnight in water, let swell and drain. Mix with the remaining ingredients and form small pancakes. Fry both sides in hot oil.

Cook potatoes for about 25 minutes, drain and peel. Wash and tear escarole. Combine bell pepper and shallots, add the rest of the ingredients to make a dressing, then mix everything together.
