Date Cake with Mango

Ingredients
- 100 g fresh dates
- 2 Eggs
- 3 tbsp Rapeseed oil
- 100 g low-fat quark
- 160 g whole grain flour (e.g., wheat or spelt whole grain flour)
- 1.5 tsp Baking Powder
- 1 tsp cinnamon
- 450 g ripe mango (1 ripe mango)
- 10 g butter (2 tsp)
Instructions

Halve the dates, pit them and put them in a large mixing bowl. Puree finely with an immersion blender.

Add eggs, oil and quark and whisk everything until creamy with a hand mixer.

In another bowl mix the flour with baking powder and cinnamon. Sift this into the date cream and fold in. If the batter is too thick, add a little water.

Wash, peel the mango, cut the flesh into slices from the stone and dice it.

Grease a small rectangular baking dish (about 27 x 18 cm) with butter. Pour in the batter and smooth it with a spatula.

Distribute the mango cubes on top and bake in a preheated oven at 180 °C (fan‑forced 160 °C; gas: level 2–3) on the middle rack for 35–40 minutes. Remove, let cool in the pan, then cut into ten equal pieces, lift out of the pan and serve.
