Ingredients

  • 400 g flour
  • 150 g sugar
  • 350 g cold butter
  • 1 tsp grated untreated lemon zest
  • 2 tbsp lemon juice
  • 250 g powdered sugar

Instructions

  1. 1.

Mix the flour and sugar together and mound on a work surface. Cut the cold butter into pieces and lay them around the edge of the mound. Add the lemon zest and quickly knead with your hands into a smooth dough. Wrap in cling film and chill in the refrigerator for 30 minutes.

  2. 2.

Preheat the oven to 180°C fan‑forced. Line two baking trays with parchment paper.

  3. 3.

Roll out the dough on a lightly floured surface to about 3 mm thickness in portions. Cut out stars of various sizes, place them on the trays, and bake in the preheated oven for 8–12 minutes depending on size. Remove and cool on a wire rack.

  4. 4.

Whisk lemon juice into powdered sugar until a thick glaze forms. Fill small piping bags with the glaze and decorate the cookies, or spread it with a brush. Let dry and serve as desired.
