Egg Yolk Cookies

Spoonsparrow egg yolk cookies are a must-have during Advent and always taste delicious!

Ingredients

  • 100 g sugar
  • 1 tsp vanilla sugar
  • 60 g ground almonds (peeled)
  • 220 g flour
  • 120 g cold butter
  • 1 egg
  • flour (for working)
  • 1 egg yolk
  • 1 tbsp whipping cream

Instructions

    Combine the sugar, vanilla sugar, almonds and flour, then sift onto a work surface. Press a well in the center, distribute butter pieces around it, and beat the egg into the well. With two pastry blenders, chop all ingredients into fine crumbs, then knead by hand into a smooth dough. Shape into a ball, wrap in foil, and chill for about 30 minutes.

    Preheat oven to 180°C (350°F) with upper and lower heat. Roll out the dough on a floured surface to a thickness of about 1 cm, cut out cookies, and place them on parchment-lined baking sheet. Whisk egg yolk with cream and brush over the cookies. Bake for approximately 8 minutes until golden yellow, then allow to cool.
