Currant Jam

Ingredients
- 1.2 kg red currants
- 250 ml Water
- 500 g extra-agar sugar (2:1)
- 2 packets vanilla sugar
- 1 lemon (juice)

Wash the currants and remove stems. Place them in a pot and crush. Add 100 ml water, stir, and heat without boiling.

Transfer the fruit mash to a stretched cheesecloth and let the juice drain. After cooling, squeeze the mash through the cloth.

Measure the juice and if necessary top up with water to 1 l. Add the agar sugar and stir; leave for 30 minutes. Then mix the vanilla sugar with lemon juice into the juice. Stir while heating on high until boiling, then simmer for 3-5 minutes until fizzy. Fill the jam completely into hot-washed jars and seal immediately. Leave the jars on their lids for about 10 minutes, then flip over and let cool.
