Ingredients
- 500 g apricots (pitted, weighed)
- 500 g red currants (patted dry, weighed)
- 1 kg gelatin sugar
- juice of one lemon

Mix apricots, currants, gelatin sugar, and lemon juice in a large pot. Cover and let steep for about 3 hours to allow the juices to develop.

Wash jars and lids very hot and let them drain.

Bring the fruit mixture to a boil over high heat while stirring until it bubbles vigorously, then simmer for 4 minutes with constant stirring. Fill the prepared jars with jam, seal immediately, place on the lid side for about 5 minutes, then flip and allow to cool.
