Ingredients

  • 0.25 onion
  • 0.5 garlic clove
  • 1 stalk Parsley
  • 200 g mixed ground meat
  • Salt
  • ground pepper
  • 1 tsp medium‑spicy mustard
  • 1 tsp grated Parmesan
  • 1 tbsp Olive Oil
  • 0.25 Cucumber
  • 2 Tomatoes
  • 0.25 yellow bell pepper
  • 1 tsp chopped basil
  • 1 tbsp extra‑virgin olive oil
  • 1 tsp apple cider vinegar
  • Salt
  • ground pepper

Instructions

    Peel and finely dice the onion. Peel and mince the garlic. Wash, dry, and chop the parsley. Mix the ground meat with mustard, parsley, onion, garlic, and Parmesan; season with salt and pepper.

    Form small balls from the meat mixture and brown them in a hot pan with oil until golden all around. Peel, halve, deseed, and dice the cucumber. Wash, halve, deseed, and dice the tomatoes and bell pepper.

    Combine cucumber, bell pepper, tomatoes, basil, extra‑virgin olive oil, apple cider vinegar, salt, and pepper. Let sit for 5 minutes, then spoon into small glasses and top each with a meatball to serve as a bite‑size starter.
