Ingredients
- 1 Shallot
- 400 g sea bass fillet
- 3 tbsp lemon confit
- 2 tbsp grape seed oil
- 1 tsp lemon juice
- Sea salt
- Pepper (freshly ground)
- 4 small salad cucumbers
- rose pepper
- 2 tbsp freshly chopped parsley

Peel the shallot and finely dice it. Rinse the fish, pat dry, and finely dice it as well. In a bowl combine the diced shallot, fish, lemon confit, and oil; season with lemon juice, sea salt, and pepper.

Wash the cucumbers, cut them lengthwise in half, and scoop out the seeds. Fill each cucumber half with the fish mixture and arrange on plates or a large platter. Garnish with rose pepper and parsley before serving.
