Ingredients
- 1 onion
- 2 garlic cloves (finely chopped)
- 1 bunch spring onions
- 2 tbsp oil
- 1 tbsp curry powder
- 1 tsp coriander seeds
- 1 bay leaf
- 100 g Mu-Err mushroom (canned)
- 250 ml coconut milk (unsweetened can)
- 200 ml fish stock
- 800 g cod fillet
- fish sauce

Wash, trim and slice spring onions into diagonal rings. Sauté with garlic in hot oil. Add curry powder, coriander seeds and bay leaf; cook briefly. Pour in coconut milk and fish stock, bring to a boil and simmer over medium heat for about 10 minutes.

Wash cod fillet, pat dry and cut into bite-sized pieces. Add drained and rinsed mushrooms to the sauce and simmer for about 8 minutes until cooked through. Season with fish sauce and serve with rice if desired.
