Ingredients
- 4 swordfish steaks (200 g each)
- lemons
- 2 tbsp fennel seeds
- 0.5 tsp Salt
- 2 garlic cloves (finely chopped)
- 150 g butter
- 4 anchovy fillets (rinsed, drained, finely chopped)
- Cayenne pepper
- 2 tbsp dill
- 1 tbsp lemon zest
- pink peppercorns
- lemon slices
- dill sprigs

Mix lemon juice with fennel seeds, salt and garlic. Marinate the fish in this mixture for about 30 min. Pat the steaks dry. Whisk butter and anchovy fillets with a pinch of cayenne pepper into a paste. Brush the steaks with the anchovy butter and form the remaining butter into rolls to chill.

Grill the steaks in a hot grill pan for 3 minutes per side. Roll the chilled butter in dill and lemon zest, slice into rounds, and serve on top of the steaks. Sprinkle pink peppercorns and garnish with lemon wedges and dill sprigs.
