Sardine Rolls with Filling

Ingredients

  • 8 sardine fillets (with skin)
  • 2 Spring Onions
  • 4 radishes
  • 1 Red Onion
  • 1 tsp Pink peppercorns
  • 3 black peppercorns
  • 1 tbsp Raisins
  • Sea salt
  • 150 ml lemon juice
  • 1 tbsp oil

Instructions

    Mix the lemon juice with coarsely chopped raisins and crushed peppercorns, season with sea salt and pepper. Combine the raisins with pepper and lemon juice and marinate the sardine fillets in it for 15-20 minutes in the refrigerator. Wash the spring onions and cut them lengthwise into sticks. Wash the radishes and shave them thinly, lightly salt. Peel the red onion, slice into fine rings, and lightly salt as well.

    Remove the sardine fillets from the marinate, let drain, strain the remaining liquid through a sieve and spread the sieved contents on both sides of the fillets. Place some spring onion strips, radish slices, and blue onion rings on each fillet, roll up, secure with a wooden skewer, sprinkle with sea salt, and serve plated with onions and radishes.
