Cucumber Salad with Tomatoes and Goat Cheese

Ingredients

  • 8 tomatoes
  • 1 cucumber
  • 1 Red Onion
  • 4 sprigs Parsley
  • 2 tbsp white wine vinegar
  • 4 tbsp olive oil
  • Salt
  • Pepper
  • 200 g Goat cheese

Instructions

    Wash the tomatoes, cut off the stems in a wedge shape, and dice them into bite-sized pieces. Wash the cucumber and dice it into bite-sized pieces.

    Peel and finely chop the onion. Wash the parsley, pat dry, and chop.

  3. 3.

    Combine tomatoes, cucumber, onion, parsley, vinegar, and oil; season with salt and pepper. Distribute onto plates.

    Crumble goat cheese over the salad.
