Spinach Watermelon Salad with Beef

Ingredients

  • 500 g ribeye steak (4 ribeye steaks)
  • Salt
  • Pepper
  • 5 tbsp olive oil
  • 1 bunch radishes
  • 200 g baby spinach
  • 200 g watermelon flesh
  • 100 g feta cheese (50% fat in the package)
  • 1 Avocado
  • 2 tbsp balsamic vinegar
  • 1 tsp Honey

Instructions

    Trim the steaks, pat them dry and season with salt and pepper. Heat 2 tablespoons of oil in a pan and sear the steaks on both sides for 6–8 minutes over medium heat until pink. Remove from the pan and let rest covered.

    Meanwhile, peel, wash and slice the radishes. Wash and spin-dry the spinach. Cut the watermelon flesh into cubes, crumble the feta. Halve the avocado, remove the pit, scoop out the flesh and cut into pieces.

    For the dressing whisk the remaining oil with balsamic vinegar and honey, then season with salt and pepper. Arrange the spinach, radishes, watermelon cubes, avocado pieces and feta on plates. Slice the steaks and place them over the salad, then drizzle with the dressing.
