Soba Noodle Salad with Cucumbers and Sesame

Ingredients

  • 200 g soba noodles
  • soy sauce (to taste)
  • 4 tbsp sesame oil
  • 40 g sesame seeds
  • 1 cucumber salad
  • 50 ml Rice vinegar
  • 0.5 tsp rice syrup

Instructions

    Cook soba noodles in boiling water with 2 tbsp soy sauce according to package instructions until al dente. Drain, let cool slightly and mix with a little sesame oil.

    Toast sesame seeds in a hot pan without fat until lightly golden. Remove and cool. Peel cucumber, trim ends, cut lengthwise in half and slice very thinly. Whisk vinegar with rice syrup, 3–4 tbsp water and remaining oil; season with soy sauce. Toss cucumber slices with noodles, sprinkle sesame seeds, and divide among 4 bowls.
