Ingredients

  • 250 g potatoes (firm type)
  • Salt
  • 1 cucumber
  • 2 Apples
  • 200 g salad mayonnaise
  • 50 g yogurt
  • 2 tbsp pickling liquid (from pickles, or apple juice as substitute)
  • ground pepper
  • 1 bunch chives
  • 8 matjes fillets

Instructions

    Wash potatoes and boil in salted water for 20-25 minutes. Drain and peel.

    Wash, peel, halve, and seed the cucumber. Slice into rounds. Wash apples, quarter, core, and cut into thin strips.

    Whisk mayonnaise with yogurt and cucumber juice. Season with salt and pepper. Fold in cucumber and apple. Dice potatoes into small pieces and add. Taste again.

    Rinse chives, shake dry, and cut into fine ribbons. Mix into the salad. Arrange matjes fillets with the salad together.
