Ingredients
- 1 large cucumber
- 2 tbsp salt
- 1 tbsp Sesame oil
- 1 tbsp dark soy sauce
- 2 tsp sugar
- 2 tbsp rice vinegar
- 2 tbsp pickled ginger

Wash the cucumber and shave very thin longitudinal slices. Sprinkle the cucumber slices with salt and let them drain in a sieve for 45 minutes. Then rinse under running water and pat dry.

Drain the ginger and cut into thin strips. Mix the ginger with the remaining ingredients and combine with the cucumbers, letting it rest for about 15 minutes. Arrange on plates before serving.
