Artichoke Spinach Salad

Ingredients
- 4 artichokes
- 4 tbsp Lemon juice
- 300 g fresh young spinach
- 4 tbsp olive oil
- Salt
- ground pepper
- 2 garlic cloves (finely chopped)
- 6 tbsp toasted pine nuts
- 1 carrot (finely chopped)
- 3 tbsp parsley (finely chopped)
- 2 tbsp white balsamic vinegar

Wash the artichokes, trim the stems, remove the tough outer leaves and cut off the tips. Halve them, discard the choke, and simmer in plenty of salted water with lemon juice for 15 minutes. Drain and let cool.

Wash, clean, and drain the spinach. Whisk together olive oil, balsamic vinegar, salt, pepper, parsley, garlic, carrot, and pine nuts to make a dressing. Arrange the spinach on plates, top each with two artichoke halves, and drizzle generously with sauce before serving.
