Ingredients

  • 2 cucumbers
  • 50 g pecorino (1 piece)
  • 100 g yogurt (1.5% fat)
  • 250 g cream cheese
  • Salt
  • Pepper
  • 100 g pitted black olives
  • 100 g sun‑dried tomatoes
  • 0.5 bunch thyme

Instructions

    Wash and trim the cucumbers, then slice each cucumber lengthwise into 6 evenly thin slices and lay them out on a work surface.

    Grate the pecorino, whisk it with yogurt and cream cheese until smooth, and season with salt and pepper. Spread the cheese mixture evenly over the cucumber slices.

    Chop the olives and tomatoes. Wash the thyme, shake off excess moisture, and cut 12 stems. Distribute these ingredients on one end of each cucumber slice, roll loosely from that end, and arrange the rolls on a platter.
